In the heart of Testaccio, Ch 18 87 was established in 2017 to celebrate 130 years of the family's management of the Checchino restaurant, a pillar of Roman cuisine since 1887. With the aim of paying homage to this tradition, the bar decided to explore a new world: mixology. The intuition was to pair the art of cocktails with traditional Roman cuisine, creating a unique fusion of rich and complex flavors, just like those that characterize the restaurant's historic menu.
Ch 18 87: The Alchemy of Scents in Your Glass
The Scent menu at Ch 18 87 is inspired by the world of perfumes, transforming each cocktail into a sensory work of art. By applying perfumery techniques to mixology, we have created a range of signature drinks divided according to the olfactory pyramid: Head, Heart, and Bottom notes.
The "Ch Collection" offers a series of cocktails that explore all the nuances of the olfactory pyramid, providing a complete experience, just like a refined perfume.
New in 2025: the Creole Corner dedicated to Martinique Rums
Head Notes
The so-called top notes of the olfactory pyramid are the lightest notes of a perfume. Characterized by a fresh fleetingness, they are the olfactory notes mainly arising from citrus and aromatic accords.
More generally, the absolute protagonists of this part of the pyramid are all Citrus fruits and, secondarily, aromatic herbs along with some seeds and rhizomes that are, so to speak, "fresh" such as Anise and Ginger.
Heart notes
The heart notes of the olfactive pyramid are composed of more full-bodied aromas than those of the top notes.
In perfumery, these notes represent the body of a fragrance, offering a more diverse aromatic range compared to the characteristic freshness of the top.
These scents are characterized by floral, fruity, marine, and green accords, notably featuring flowers like Rose, Lily of the Valley, and Iris, alongside fruits such as Peach, Apricot, Pear, and Apple, and more carnal notes like Vanilla and Tonka Bean.
Bottom notes
Base notes are the foundation of a fragrance.
In perfumery, these represent the olfactive notes that express themselves the longest over time, effectively supporting the perfume's entire structure.
Broadly speaking, base note accords are characterized by warm and spicy aromas, but not exclusively. In this part of the pyramid, we find raw materials like Cedarwood, Patchouli, Lavender, Geranium, Pepper, and Cinnamon, as well as Gourmand aromas such as Caramel, Coffee, Honey, and Cocoa.
CH Collection
This collection of cocktails isn't exclusively dedicated to a single aspect of the olfactive pyramid. Instead, much like perfumes, these drinks utilize the pyramid in its entirety. Just as in a perfume collection, you'll discover cocktails that are fresher or spicier, more floral or lighter, creating our unique Cocktail-Perfume collection. Cheers!

VINTAGE COCKTAIL
In 1887, while Checchino was obtaining his first tavern and kitchen license in front of the slaughterhouse, in Milan, Davide Campari invented Cordial Campari, a liqueur made from distilled fresh seasonal raspberries and sugar. Cordial Campari was withdrawn from the market in the 1990s.
In this drink, a historic bottle of this legendary liqueur meets the dryness of Château-Chalon 1996, the first DOC wine in France, famously nicknamed "the devil's wine" because, according to some, its perfect aging period in barrel was said to be 6 years, 6 months, and 6 days.
With these two bottles, which never met on a shelf, we invite you to drink a piece of history. Cheers!
